How to Make Annie's Mac and Cheese Creamier and Easily add More Veggies

If you read my blog you know that I am trying to eliminate as much processed foods as possible.  But I do have the occasional processed food product here do and there like Mac and Cheese.  I do at least get Annie's Organic Mac and Cheese.

How To Make Annie's Mac and Cheese Rich and Creamy
I have found that by following the instructions on Annie's Mac and Cheese, (not adding anything to the cooked pasta except the powdered mix)  it does not turn out very good.  It' s not very creamy and cheesy. Here are a few ideals to make it more creamy:

  • add 1 tablespoon of organic 1/2 and 1/2 (or you could do 1/4 cup of organic whole milk),
  • 1 tablespoon of grass fed butter or extra virgin olive oil
  • sprinkle some shreaded extra sharp cheddar cheese on top (could mix some in and sprinkle on top too if you want to be extra cheesy
  •  add 1 oz of low fat organic cream cheese
  •  add organic alfredo sauce to it.


Veggies That are Easy to add to Mac and Cheese

  • cook frozen or fresh cauliflower and or broccoli florets
  • add fresh or frozen spinach or kale
  • add garlic
  • add sundried tomatoes
  • add cooked mushrooms
  • add cooked and diced onions
  • add cooked and diced zucchini
  • frozen peas

By being more aware of the nutritional, filling, and low cal miracles of veggies I have been trying to add as much to every meal as I can.  Just think you can eat as many vegteables as you want no limits.  No one ever became over weight from eating vegetables!  And just think if you had a variety of vegetables in every meal what kind of variety of nutrition you would get.  The hard part is how do you have a variety of vegetables around without going to the market every few days?  I have found the easiest vegtables to work into a variety of dishes that keep for a long time are sun dried tomatoes, onions, garlic, and frozen organic spinach, peas, cauliflower, and broccoli.
